Easter Morning's Breakfast
I'm having orange soup with coconut vanilla whipped cream for breakfast. The picture doesn't do it justice. It's really an amazing soup!
Orange soup: 2-3 oranges, 6 dates and about 1 C water. Blend and refridge overnight.
Whipped Cream: 1 young coconut (water and meat), 1 vanilla bean scraped, 1/2 to 1 C cashews or macadamia nuts (soaked) and 1 Tbs honey or agave, dash sea salt. Blend refridge overnight.
A quick note of advice: When opening young coconuts with a meat cleaver.... Watch out of the bounce back. Yesterday the heel of the cleaver bounced back and I gave myself a deep gash on the back of my left hand. But the Whipped Cream is always worth it!!!
